Ingredients

1 Onion Onion
2 tablespoons Oil
2 cloves Garlic
2 tablespoons Tomato Paste
1 teaspoon Salt
1 teaspoon Oregano
1 teaspoon Paprika
1 pinch Red Pepper Flakes
1 cup Vegetable Broth
2 cans (15 ounces each) White Beans
1/2 cup Sun-Dried Tomatoes
2 cups Spinach
1/2 cup Heavy Cream
1 handful Basil
1 Bread Bread for Dipping
Instructions
Peel and dice the onion and garlic to ensure even cooking and better flavor distribution.
Heat 2 tablespoons of oil in a large pan over medium heat until it shimmers.
Add the diced onion to the pan and sauté, stirring occasionally, until soft and lightly golden.
Add the chopped garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add 2 tablespoons of tomato paste and stir well, cooking for about 2 minutes to develop the flavors.
Sprinkle in 1 teaspoon of salt, 1 teaspoon of oregano, 1 teaspoon of paprika, and a pinch of red pepper flakes. Stir well and let it simmer briefly.
Pour in 1 cup of vegetable broth and the 2 cans of white beans. Let it simmer for about 5 minutes until the broth thickens slightly.
Add 1/2 cup of sun-dried tomatoes and 2 cups of spinach. Stir until the spinach wilts and the colors are vibrant.
Pour in 1/2 cup of cream and let the mixture simmer on low heat for 2 minutes until creamy and well combined.
Stir in a handful of fresh basil and let the dish sit for a final minute to bring in fresh flavors.
